DHALIYA OR BROKEN WHEAT KHICHDI:
Ingredients :
Dhaliya or broken wheat - 1/3rd cup
Moong dhal - 1/3rd cup
Onion - 1 small
Tomato - 1 small
Garlic - 1 pod
Green chilli - 1
Carrot - 1 medium size
Beans - 4 to 5 nos
Palak leaves - few
Peas - few
Water - as reqd (1 cup (dhaliya + dhal) = 3 cups water )
Turmeric powder - 1/2 tsp
Salt - 3/4 tsp (as per taste)
Ingredients :

Garlic - 1 pod
Green chilli - 1
Carrot - 1 medium size
Beans - 4 to 5 nos

Turmeric powder - 1/2 tsp
Salt - 3/4 tsp (as per taste)
Seasoning :
Ghee - 1 tsp
Jeera - 1/2 tsp
Ajwain - 1/3 tsp
Steps :
1. In a pressure cooker roast broken wheat or dhaliya with little Ghee till it releases an aroma and turns golden brown.Keep it aside.
2a. Roast Moong dhal till it releases a good aroma of the dhal and keep it aside
2b. Soak it in little water for about five mins.
3. In the same cooker add generous amount of Ghee, Jeera , ajwain and allow it to splutter.
4. Add the chopped onions, garlic and green chillies and saute it till golden brown adding a pinch of salt required for the onion to cook.
5. Then add in the tomatoes and saute till it turns to mushy state.
6. Add the chopped veggies of your choice and saute it for about a minute or two.
7. Add a pinch of turmeric powder and the required salt for the khichdi.
8. Add the roasted dhaliya and soaked Moong dhal at this stage.
9. Add water at this stage (follow 1:3 ratio in this case 1 cup of dhaliya + dhal to 3 cups of water)
Note: Add in 1:4 ratio when you need khichdi to be in runny state.
10. Pressure cook for four to five whistles.
11. Delicious dhaliya khichdi is ready to be served.
