METHI THEPLA:
Ingredients for dough:
Methi leaves or vendhaya keerai leaves - 1 cup
Wheat flour / atta - 1 cup
Gram flour / kadalai maavu - 1/3rd cup
Sesame seeds - 1/3 rd tsp
Ajwain - 1/2 tsp
Kashmiri chilli powder - 1/2 tsp to 1 tsp
Salt - as per taste
Curd - 2 tbsp
Turmeric powder - 1/3rd tsp
Ginger - 1/2 spoon grated
Oil - 2 tsp for dough making
Water - as needed.
For making thepla:
Ghee - as reqd
Note:
The above quantity will make 5 to 6 medium size theplas.
For entire mixture you might meed close to 1/2 cup water since curd is also added.
Make sure the dough is smooth and tight so you will get soft theplas.
Make sure to wash the methi leaves to remove mud or impurities and chop them well.
Steps:
1. In a mixing bowl add everything in ingredients except water and first mix it well.
2. Adding water little by little knead the dough to tight state.
3. Add oil and knead it for another fives minutes.
4. You can immediately prepare the theplas without keeping aside the dough to set.
5. Make medium size ball and flatten it , also dust wheat flour as in when needed.
6. On a hot tawa place the rolled thepla and cook it for a minute and turn the other side.
7. Once it starts to turn golden brown adding Ghee on both sides and flip it and cook it well.
8. Theplas are ready to be served.
Tasty and soft Theplas can be had as it is or served with raita other gravy.
