MILAGU KUZHAMBU:
Milagu kuzhambu is considered to be a cleansing food.This is a no onion/garlic,no veggies , no extra spices recipe. It is a good recipe for rainy days or sick days when we kinds need a comfort food.This goes well when served with steamed rice with Ghee on top. I like it with Dosas too.
The below recipe serves two people.
Ingredients:
Tamarind - a small lemon size - 2 cups
Turmeric powder - 1/2 tsp
Salt - as per taste
Jaggery -1/2 to 1 tsp
Roast & Grind:
Urad dhal - 2 tbsp
Toor dhal - 2 tbsp
Coriander seeds- 1/2 tsp
Black Pepper corns- 2 tbsp
Red chilli dried - 1
Curry leaves - few
Seasoning:
Gingelly oil - 2 tsp
Mustard seeds - 1/2 tsp
Jeera - 1/2 tsp
Steps:
1. Dry roast urad,Toor, coriander seeds,pepper,red chilli and curry leaves until it gives a good flavour.
2. In a mixer add the roasted ingredients and grind it to a smooth powder form. I like it little coarse as you can see in the final pic.
3. In a pan add oil,mustard, Jeera and allow it to splutter and then add 2 cups of tamarind juice,turmeric ,salt and small.piece of Jaggery and allow it to boil well for good 10 mins in medium flame.
4. Once tamarind reduces in quantity add the grinded powder to it and give a stir and boil it for few mins till it becomes thick. Add extra salt or Jaggery if needed depending on taste.
5. Hot milagu kuzhambu is ready to be served with rice or Dosa.
