PALAK CHAPPATI
Palak chapati is one healthy recipe for breakfast , dinner or
tiffin box. For kids or adults who dont like spinach in any form this is
one best method to sneak in. Palak chapati goes well with normal raita
and tastes excellent with pudhina raita.
Ingredients:
Wheat flour - 2 cups
Salt - as per taste
Water - 1 cup
Oil or ghee - 2 tsp
Grind:
Palak leaves - 10 to 15 leaves blanched (can use upto half of one bundle of palak)
Green chilli - 1 (as per spice level)
Garlic - 2 small pods
Ginger - half inch slice
Steps:
1. Wash palak leaves thoroughly three to four times to remove mud.
2. In a sauce pan add water about 1/3rd cup , palak leaves and salt to it.Cook for 2 to 3 minutes with lid closed. Make sure colour of palak doesnt change much.
3. Once it cools down, in a mixer add the cooked palak without water, Green chilli,Garlic ,Ginger and grind it to a smooth paste.
4. In a mixing bowl add wheat flour, required salt, palak paste in step 3,oil and using water knead it into a normal chapati dough form.(You can use the excess water used for cooking palak to also knead the dough)
5. Roll chapatis using rolling pin.
6. On a hot tawa drop in the chapati and flip it both sides till its well cooked and apply ghee on both sides.
7. Soft palak chapati is ready to be served with raita.
